even the fancy new, almost western building being built next to me..... I went and looked at the Open House... decent place, except still a Chinese kitchen, small fridge space too.
Gas heats up faster and cooks more evenly than electric stoves. As Chinese cook dishes one a time, they certainly don't need more than two burners.
Small fridge space, unless of course you put your huge fridge outside of the kitchen (bizarre concept but quite common).
Scandinavian:
induction tops are just as fast, less messy, heats evenly (if it's a proper one)
we have 3 burners, the middle one can only be in use if all 3 pots/pans used are tiny
the kitchen in our otherwise spacious apartment is tiny, there is no table space, it is not possible for more than one person to work in the kitchen, even washing dishes while someone is cutting a carrot is tricky.
You have to remember, that the Chinese happily put food on the floor during the preparation process. and in this light, we have more than a hundred square meters of "kitchen table"
Out fridge is a tiny little thing, it is however put in a place where something of proper size could have been. (likely a financial concern from our landlord)
I have seen newer apartments with full four-burner ranges and Western-style ovens and these weren't even top, top of the line apartments. Four burners do exist but as someone wrote above, I think that perhaps it has more to do with Chinese cooking practice than anything else.
Haha, I had this conversation just the other day with a friend. My Chinese girlfriend was puzzled because I bought several frying pans and pots to cook with. Until I cooked her a meal where everything was ready at the same time and hot. Now she says how convenient it is. I have 2 gas burners and I bought 2 hot plates that I can pull out when I need them. I also bought a side by side refrigerator freezer (with ice maker in the door) and a real clothes dryer. My New Years resolution last year was to make myself more comfortable in China
Don't know why they do not like a bit bigger space in kitchen, watch my work in this tiny kitchen Every house i have rent in china, even the one with 120 sq.meter size have this tiny kitchen :(
and my home back ( my mom there doing a b-day cake for me ) - itsa only half of the whole kitchen
They don't separate food like we do, it all goes into the wok!
I like to cook and have found that the gas ranges are quite useful if you want to really put some heat into the food. This is ideal for cooking in a wok. However, what I have found is that the Chinese design for the burners make it almost impossible to cook with a low or medium heat. Just forget about trying to simmer a sauce or slow cook in my tagine.

Agreed, long term, low heat is impossible with Chinese burners. It's either still way too hot, or the flame just goes out on it's own and you have to keep relighting it.
Argh!
Aside from the general tininess, my biggest complaint is always the placement of things like cabinets and the stove hood or range that has a fan, it's always placed so low that I always have to stand at a really awkward angle, or I constantly bang my head into it, or bang my head into the corner of a cabinet and bleed profusely.

I don't see what's wrong with gas hobs. We used them back home, with electric ones you can't control the heat as well as with gas, and you have to wait for them to heat up/cool down. Electric stoves suck, end of. As for only having 2, well as everyone else has said, it's because of the lack of space and they Chinese style of cooking I guess.
I dunno but you do have to be aware that sometimes these gas barrels leak. I had a student whose mother collapsed and died in the shower a few years back because of such a leak.
i live in a 2 bedroom living room is huge, master bedroom with ensuite, and another bathroom besides plus a good size dining room
kitchen is just slightly bigger than my closet in my first apartment back in the US
Having not lived there yet, my opinion on the matter is limited to just personal preference with regards to cooking.
Gas is a much faster and easier way of cooking any foods for a start. Not on;y that, but it also allows for even heat distribution throughout the pan. Secondly, I personally never need any more than two stoves when cooking any meals. It is very easy to keep food hot and reheat foods as well.
If you live in northern China you can use the gas burners to heat up you home. The Chinese know this, so they limit you to two burners so you are forced to pay for heating up your radiator or buying an electric radiator so you pay a lot for electricity to keep warm.
you have to pay for your radiator anyways because in northern china you have teleheating...
to the topic:
either they are bad at multitasking or they throw all into one pot. if they cook more dishes then the first dishes are already cold on the table before you can start eating all dishes together.
mostly my gf says start eating (first dish...) but i wanna eat alltogether not 1 dish by another
