Q: Why am I not getting picked for a promising job interview, although I am a German native speaker?
I am a 54-year-old German native speaker with Italian citizenship and I have an academic degree in translation studies. I have been looking for a teaching job (even online) since January 2021. I have applied for many jobs but have been invited only for a few and not very promising job interviews.

If you earned a Master's Degree in English Literature or a related subject, you can teach English legally in China even if you don't hold a passport from the usually accepted list of countries. The visa requirements clearly specifies this “loophole”.
Nonetheless, I think this requirement is only for teaching English. If you are a licensed teacher of another discipline, such as Math or Physics, you don't need to be a native speaker, although most schools would rather hire a teacher from a country where English is the native language.
Right now China’s borders are closed (does anyone have new information?), at least that’s what everyone is saying. China is probably only going to reopen the borders again once most of the population is vaccinated, and that might take a while.
By Chinese standards, you aren't native German speaker, if you don't hold a German passport despite you might be born in Germany.
I was with the employer in June, 2017, when the last Labour law change was implemented, i.e. " ... only native English passport holders qualify for an English teaching job ..", and I saw the whole process of applying for an English teaching permit/employment online.
Once, you are non-Native English passport holder as I am, government's website just went blank.
That might be the reason for your non-acceptance ...

At English teaching all advertisers in EU demand native English passport holder despite all native English passport holders require an extensive paper work to be able to work in Schengen. Funny world ...
In China, passport one is holding is the main card ... what, IMO is because "employer is able to judge one's language proficiency and pronunciation only through potential employee's passport".
You would also have a doubts at Chinese language teacher with Japanese or Zimbabwean passport ...

Unless you are applying for a job specifically as a German teacher you aren't meeting the first and most important criteria for a Chinese school. You are not a native English speaker from one of the selected countries.
This means that it will be very difficult to get you a working permit, or these days virtually impossible.
I suggest you reach out to 'International and IB schools' in China directly to look for a position as a Gernamn teacher. That is your foot in the door to teaching other subjects and getting a work permit.
German must build up good relationship with China before you get the opportunities. At the currrent diplomatic situation, it was impossible for any Germany to get this opportunity.

Covid-19 cold be an issue with your luck too! You could try with writing as freelance and earn more money during this terrible situation. I am also doing this same and help people with their daily living activities.
