Q: is your 'clever" thing a decent knife? or just brute force does it?
I, just now, went to filet a fish... not often I go in the kitchen, wife does it all. I special ordered this fish, so she invited me to carve it up as I see fit.......just for me... a whole fish ..8 people coming to dinner.
the flipping knives are useless.... how in the hell does one get by, in the kitchen, without a good knife?
my duty tomorrow... a stone and a lot of effort, guessing I can do better than buying another shitty knife.

I had a really good Scandanavian filleting knife. But when my fishing tackle was sent over here from the UK Chinese customs confiscated it. Good knifes are banned apparently. But have you seen those knife shops in the highway service stations? Amazing. Everything from medievel pikes to Samuarai swords. But I am not allowed my good quality filleting knife.

darn, at first I thought you were talking about taking care of oneself on the street.... lol....
well, anyway, speaking of kitchen knives have you tried the little ol' man who wanders the city streets offering the blade grinding service? It's a nice service for basically just a few pennies. Have u tried it? and it helps the ol' man who could basically use those few pennies~
We have some shitty meat cleavers. Good for bashing up stuff with no finesse what so ever. We also have a couple of knives that was bought cheaply in supermarkets. One is actually decent, doesn't stay sharp for that long, but have been seen fileting stuff.
Back home I have a set of Scottish (only joking, they are German) knives. Been in use for years and can cut through anything....
At the wet markets there is often a dude sitting that will sharpen knives. It's worth the 5-10 kuai, as the knives will stay sharper longer by this "professional" sharpening, but having a sharpening steel and giving the knife a quick brush up often if the way to go.

I bought a set of knives too... couple years ago...seldom used. just recently I been checking them out, mostly useless. bread knife is fine, and I like the block they came in.
actually the little "paring" (sic) knife is Ok too..
