I've got two - eggplant and balsamic pear (苦瓜). the second one took me a while to get used though its now one of my faves!
Pomelo, most of the 'green' vegetables don't know their names most look like weeds but they cook up well, Pumpkin stalks, (the green bit not the huge yellow / orange bit), mustard leaves, the whole idea of pickled fruit I found abhorrent but now I love the taste, (still prefer fresh mind).
To be honest, I find that in Nanning there is a huge variety of fruit and veg that is just not available in the UK and it's tasty, (at least it is when cooked). However the meat leaves a lot to be desired.

Never touched pumpkin till I came here. Love it now. Dragon fruit was new to me, but is delicious. Caihua is the green vegetable with the yellow flowers and i'm a big fan. Also like sigua. It's kind of like a savory melon or something. Chop into slices and fry it up though and yum. Job's a good'n.
Cucumber, tomato and eggplant. I think that all the vegetables taste much better in the Chinese dishes. But that's probably because I don't like vegetables and the flavor of the spices and sauces hides the taste of the veggies
I really like Tong Hao, its a green leafy veggie, my dictionary says crowndaisy chrysanthemum, but I have no idea, I dont think I ever at it before China.
Also I never cared for eggplant and pumpkin until I tred it here.
Pumpkin stalks, as mentioned, lotus root and jing jiang gou. Lotus root and the white water mushrooms are my absolute favorite in hot pot and I've never seen them in Canada.
Boiled or deep fried lettuce. I never knew it could be cooked.
What are you kidding? There are so many. Ranging from the previously known but dull (like asparagus and aubergine) to down-right exotic - wax berries are awesome, and so are mangosteen and dragon fruit. I never used to eat mangoes or sweet potatoes either, although I knew what they were.
