I really admire people who come here and not only master standard Mandarin but pick up some quirky local dialect as well.

I was impressed as well, but for me I have not yet to accomplish that. It's very hard. I do like Cantonese, but that seems to be the hardest one to learn.
The few words i have picked up some may be local and i may not even realize it. There's a few changes where im from for example they say quaidian(qucikly) and in Beijing they say quaidar. So being new to the language i will never know what the standard is.
My wife is from Hubei (we live in Guangdong) and I've picked up some of her dialect from when we've visited her family and when she is on the phone. for example chi fan is jia fan and gan ma is gan mo de.
MInnan? Hahah nothing...well 'xie xie' is 'se se' LOL
