I recently accepted a job in China.
The entire process moved rather quickly, and in haste, I took a job I feel isn't quite right for me. I've already sent all required documents to them in order to get the letter of invitation for the Z visa. I haven't heard back from them regarding the progress, but they expected things to move fast.
If I decided to pull out my acceptance and instead chose another job in China, would I be able to do so? Basically I'm concerned that my letter of invitation for a visa would be tied to this employer and I wouldn't be able to start the process over. Any insight is greatly appreciated.

If you are considering a job in the same city or even in the same province, and if the prospective employer has caused the Foreign Expert Certificate to already issue, then things might become a little dicey for you. If you can stop the process in time and if no documents at all have issued, then you will have no problem at all, regardless of whatever threats or nasty comments the prospective employer might make.
In the past, FEC's were processed locally with little national interference. Today, however, the entire system is computerized on a national level so there could, and I only say could, be a question of an open record on an FEC but then again depending upon the ability of the second new employer to overcome this issue, there might not be a problem at all.
So the bottomline is this : if you don't want the job, stop the process as soon as possible..
You need to contact them as soon as possible. If nothing has been issued then your free to do whatever you want, regardless of what threats or other things the company may say to you.
If the process has already started or you already then it will be very hard to quit and get another job.
Of course if they've already processed everything and you quit before starting then they will just cancel your work permit/visa/etc etc at which point if your in the country youll have about 10 days to find a new job or leave. If your not in China already then it's not much of a problem, just wait a couple weeks and start applying to other companies
you can cancel now, but move quickly. it will not hurt you in the future.
This is China and in the end everything is resolved on a very local level, with perhaps, the exception of the three largest cities. If your future but denied employer wants to hurt you and if it has the amount of relationships needed to do it, it will. If it is is just blowing hot air and does not want to expend political capital (and perhaps pink little banknotes), then it will not do it.
As others have said, and as I said initially, please just cut the process as soon as possible but as politely as possible allowing for the minimal amount of loss of face on their part.
