Jindingxuan (金鼎轩) is by far the most famous. The one over at Yonghegong is always packed and you usually have to wait before you get a table. The shrimp dumplings are just devine. Most of their food is fantastic. http://www.jindingxuan.com.cn/

Yes I agree Jindingxuan 金鼎轩 is a very good one to suggest. It is a chain restaurants operated by HK businessman and there are several restaurants in Beijing, one by the south entrance of Ditan Park and another within Golden Source Shopping Mall in Haidian district. The restaurants also open for long hours if not 24 hours.

I just discovered another dim sum restaurant worthy of mention. It's called Herbal Cafe and is located in the heart of sanlitun. They have outdoor seating (not so relevant anymore but great in the summer) and the food is good.
