I've not been in this situation before... so,
I believe I can get a 30 day extension. True, not true?
If so, now many times? Only once? Or twice? (maybe even 3 times...???)
How long does it take (ie, how long will they hold onto my passport form?)
From what date does the extension take effect? The last day of the current visa, or from the date of application, or from the date they finally get around to processing it?
Anything special I need to get it done (other than the school's stuff? And, even then, is there anything in particular they need to provide?)

You'll get 30-days L (Hebei in 2012) or 30-days RP extension (Xinjiang 2013, Fujian 2014).
PSB usually won't accept your passport earlier than 5 working days before the expiration, and they'll return passport some 5 days after 30-days extension already started (Fujian).
You might need to do new Med. exam, other than that you must have at least one free page in passport for new RP stamp.
I assume, you're changing employer. You must hurry-up toward new city, so new employer will have enough time for new FEC, Medical and RP extension.

My own experience. See dates and Provinces. You can't get 2 or more extensions. Purpose of 30-days L or RP extension is to get enough time to the new employer for new FEC application, and things, before you give passport to PSB for the 'new Contract length extension'.
Another reason for 30-days extension is 'one must be (theoretically) in the classroom on the last day of RP'.
If you don't intend to change employer, 30-days is time given for traveling/exiting China.
Your new employer will need FEC Cancel Certificate and Release letter to apply for new FEC and new Contract RP extension.
You could dial SAFEA in your city for the guidance on that, too.
