I want to bring back 1-3 bottles of my favorite wine from the states. I can't bring it with me in my carry on bags. What's the best way to transport it with me so that it doesn't get broken? And do I need to pay tax on what I bring?

Properly wrapped in the checked in bags. Get them in wooden crate or something that will take the wrath of the luggage-mishandlers.
I am not sure about tax.
wrap it well.. and hide it in between your clothes.. better wrap it in your clothes.. it will not break. in your country your luggage will not be scan and if it is shanghai they will not ask you to unpack and search for something suspicious :P
See if you can find a plastic food container that is the correct size and wrap it well. I forgot a bottle of Baileys in my frig,,sniff, sniff
Just wrap them up in your clothes in your checked luggage as rabiya suggested. I've carried all kinds of bottles of wine, whiskey, liquor, etc. Just make sure they're wrapped well, and the luggage is packed kinda tight. You don't want anything to be able to shift around. But, they will sometimes open your luggage in the US to have a look. I've found TSA notices in my checked bag before. But my stuff was always intact. I think when the scanners see the bags of coffee I bring, it sets off red flags for some reason.
Technically, you're limited on the amount of alcohol you can bring in to China duty-free as personal exemptions. As best as I can remember, it's two 750mL bottles. In reality, I've never been checked in China.
