And will they automatically be Chinese if born on Chinese soil?

As many as u want.
And they will get chinese nationality through their mother, even they r not born in China, as long as their mother has Chinese nationality they can get it too.

only one in cities.
china allows its ethnic minorities to have many children , but i dont know if you (and your wife) comes in this category .

If you are a foreigner all you have to do is contact your respective embassy and fill out the paper work to registrar your child as a citizen of your home country...if you do that you can pop out as many as you please!

It is up to you as to their nationality. If you use your wives hukou then they are Chinese and you must follow the one child policy. As Beijoe says, if you declare them as a citizen of your country then you can plop as many as you want, but you must get them a visa to stay here...
