I am Canadian and married to Chinese woman. Can we simply go to embassy and make it Canadian and then get a passport? If so, when we leave the country and return do we need to constantly apply for a tourist visa for our child to live in China?

Also, I've heard nightmare stories of people giving their child foreign citizenship, but being denied leaving the country because they were born in China. Two ways.
One is get your kid a Canadian passport from the embassy and then apply at the local PSB for an Exit/Entry permit for your child. The Chinese may not like this as the kid has one Chinese parent and is born in China so they may refuse to issue the permit on the grounds that your kid is Chinese and must have a Chinese passport.
Second way is to get a Chinese passport for your kid and some kind of long term 5 year multiple-entry Canadian visa or something like a Right of Abode whatever that is for Canada.
Wait, and research before you do anything.
As lewn says above, if the father is from the UK, the child can retain his/her Chinese passport but still have UK full citizenship (by descent) by having a certificate of right of abode certificate in the Chinese passport. My daughter is in the UK at the moment with this certificate.

If you get a Canadian passport first, your kids will need a visa to come back to China. If you get a Chinese passport first, your kids will still be Chinese so can come and go as they like.
Foreign passport first.... always foreigner.... Chinese passport first... Chinese.
